This is great sandwich. I originally got the ideal from Portillo's Italian Restaurant -that was my go-to sandwich. I then started making my own version at home and here it is.

  1. 1. Prepare the bread Brush 1 tsp of prepared seasoned oil on one side of each slice of bread. Place prepared bread slices on a surface "oiled" sides down. Lightly spread the pesto sauce on the sides facing up. 2. Place 2 oz. of cheese and three tomato slices on top of one prepared bread slice -on top of the pesto. Top with a second slice of prepared bread, "oiled" side up. Sprinkle the italian seasoning on the outside of the sandwich (the sides with the oil) 3. Toast Toast the sandwiches using one of the methods below: OVEN: Place assembled sandwiches on sheet pans and toast in a preheated 400 degree F oven for approximately 10 minutes, or until the bread is toasted and the cheese is melted. FOREMAN GRILL: Place assembled sandwiches in a pre-heated Grill press and press for about 2 minutes until the bread is toasted and the cheese is melted.
