  1. 1. Wash all fresh produce thoroughly under running water to remove dirt and other contaminants. 2. Place the vegetables on sheet pans that have been sprayed with vegetable cooking spray. 3. Pour the oil and vinegar over vegetables, shake the pepper and oregano over them, and toss together. 4. Allow to sit for 30 minutes. 5. Spread the vegetables evenly on the pan and roast in a 400 F oven for 15-20 minutes or until the vegetables are tender.
