Boil the potatoes with the skin on until tender. Do not cut them. Once cooked, removed them from the hot water and place them into ice cold water (with ice preferably). Once they're cool enough to handle, peel the skin off and then cut into large dice.
In a separate large bowl, add the remaining ingredients together and mix well. Add the cut peeled potatoes by folding them in. After the mixture is evenly mixed, let cool in the refrigerator or you can enjoy as is.
This is a vegetarian recipe, you can make it 100% vegan by using a vegan mayo.
