Harira is an incredible traditional Moroccan soup. It can be enjoyed for breakfast, lunch or dinner. This soup is flavorful yet light. It's not a difficult recipe but does have quite a few steps and ingredients that require timing. Recommend a 6-8 qt pot at minimum for 4 servings. This is an authentic recipe that my Moroccan wife got from her mother. This recipe version is vegetarian (Harira Vegetarian) but it traditionally is made with lamb.

  1. On low heat, add the olive oil followed by the celery, onions, cilantro and parsley for about 5 minutes stirring and mixing every minute.
  2. Next add all of the spices. The cumin, coriander, turmeric, ginger and cinnamon along with the lentils and 1 cup of broth (from the 8 cups). Let that simmer for another 10 minutes stirring constantly. Be sure to get the bottom of the pot with a wooden or heat resistant spoon. Your mix should look like the instruction picture above (minus the neck bones).
  3. Raise the heat to medium. Add the tomato paste and continue to mix well. Let cook for another 2-3 minutes while stirring and add 1/2 of the remaining water. Continue to stir thoroughly.
  4. Roughly chop the fresh tomatoes and using a blender or food processor, puree them very fine -into sauce and then add to the mix. Add the rest of the broth. Let soft simmer for 30 minutes. *Soft simmer means the soup is moving slightly and there's vapor coming from it but no bubbles.
  5. In a bowl, add the 1 cup of water and the flour. Mix VERY well. Using a strainer, pour the mix into the soup using the strainer to catch any clumps. Soft simmer for another 20 minutes.
  6. Add the vermicelli noodles and add the first 1 tbsp of the kosher salt, stir and then taste. You can then continue to salt to taste. Let soft simmer for another 10-15 minutes.
