1. Prepare pasta. Add dry pasta to boiling water and cook for 8-10 minutes or until soft. DO NOT OVER COOK. Immediately drain and rinse with cold water to cool down
2 Combine ingredients in a large mixing bowl combine cooked pasta, diced cucumbers, diced onion, garbanzo beans, feta cheese,
artichoke hearts (DRAINED), olives and diced tomatoes. Toss together until well combined.
3 Whisk together dressing
In a separate bowl whisk together lemon juice, oregano, chopped parsley, lemon pepper seasoning and oil.
4. Pour mixture over the pasta salad and toss gently to coat the salad ingredients.
*Lemon pepper seasoning works well but your favorite seasoning will work too.
